Cooking Fish

White fish:

  • Preheat oven to 200° C
  • Place (fully defrosted, non frozen) fillets skin down in an already buttered deep pan
  • Sprinkle salt, pepper, 🍋 lemon juice or any marinade (like pesto) on the fillets
  • Place pan uncovered in middle-shelf of oven
  • Cook in oven for 15 minutes until fish is flaky

Serve with basmati rice as accompaniment:

  • Lightly fry chopped small onion using oil in a deep pan on medium heat
  • Add room-temperature water, coconut milk & salt to onions
  • Wait until water in deep pan starts boiling vigorously then
  • Add previously unwashed, unrinsed, unsoaked Basmati rice to your pan (using a ratio of about 3 cups of fluid from the pan to 2 cups of uncooked rice)
  • As soon as the water starts boiling again, cover deep pan and lower heat to minimum
  • Cook for 12 minutes; until water fully evaporates and then switch heat off completely
