White fish:
- Preheat oven to 200° C
- Place (fully defrosted, non frozen) fillets skin down in an already buttered deep pan
- Sprinkle salt, pepper, 🍋 lemon juice or any marinade (like pesto) on the fillets
- Place pan uncovered in middle-shelf of oven
- Cook in oven for 15 minutes until fish is flaky
Serve with basmati rice as accompaniment:
- Lightly fry chopped small onion using oil in a deep pan on medium heat
- Add room-temperature water, coconut milk & salt to onions
- Wait until water in deep pan starts boiling vigorously then
- Add previously unwashed, unrinsed, unsoaked Basmati rice to your pan (using a ratio of about 3 cups of fluid from the pan to 2 cups of uncooked rice)
- As soon as the water starts boiling again, cover deep pan and lower heat to minimum
- Cook for 12 minutes; until water fully evaporates and then switch heat off completely
